Tokaij wine production?
The aszú grapes are handpicked individually and gathered in containers called puttony—puttonyos is an adjective rather than the plural form—which hold roughly 25 kg. As in Sauternes, yields are miniscule. A tiny fraction of syrupy, free-run juice is allowed to settle out of the aszú must—this will be vinified separately as Esszencia. The aszú is then trampled into a paste, or dough, and a number of puttony containing aszú paste is mixed with gönci barrels of must or base wine from non-aszú grapes. The number of puttony added to a gönc (a Hungarian oak cask of approximately 136 L) determines the final sweetness of the Tokaji Aszú wine, and Tokaj Aszú was labeled with 3-6 puttonyos to indicate sweetness. It ages for just over two years prior to release (with a minimum 18 months in barrel) and must contain at least 120 g/l of residual sugar and achieve an actual alcohol content of at least 9%
