What is fortification
When vitamins and minerals are added to foods.
Common foods that are fortified and why
Cereals are fortified with iron, and B vitamins (B12, B2, B1?, B6, B3 etc) - They never contained them in the first place so it’s to add
more nutritional value to cereals, helps people to meet the dietary recommendations of the vits and mins
Orange juice is fortified with vit C - when orange juice is heated to be pasteurised, vitamin C is destroyed, so it’s added back in so the orange juice keeps its nutritional value
What are antioxidants
Antioxidants are additives (chemicals) that are added to food to prevent rancidity and browning, especially in fruits. Browning is caused by oxidation.
What do antioxidants do
The antioxidant extends the shelf life of the food product.
Examples of antioxidants
Citric acid (lemon juice) which is added to fruits to stop them from going brown. Ascorbic acid is added to jams and breads to keep them from spoiling
