Laboratory Analysis
culturing bacteria
microbiology tests
mainly measures microbial quantity which represents the total bacterial load in a given sample
Plate Counts (Total Plate Count -TPC)
count indicates the extent of fecal matter present in food and is a better indicator of poor food plant sanitation
Fecal Coliform
performed on samples to include water activity tests (Aw), phosphate tests, heavy metals, and quality assurance tests
chemistry tests
food safety concern identified
product is placed on medical hold
appropriate authority is notified
may result in a recall
food quality problem identified
PH will work with receiving activities, vendors/local managers
