What is the difference in glucaemic responses between cooked (micronised) vs uncooked starch

A

Raw food causes a lower glycaemic response, however there is therefore less absorption of starch, so more is present in the hindgut and is fermented, changing the ph of the large intestines.

Cooked starch has higher than normal blood glucose levels, (more glucose is absorbed into blood in the small intestine) so not much starch is present in the hindgut. Conserves then environment
