Incubation: 1-3 days. Gram neg.
Invade cells by taking advantage of M cells(non-moving), escape and enter macrophages which travel to epithelial cells. Multiply in epithelial cells, killing them, and causing bloody diarrhea (disentary) Fecal-oral - 5 F (fingers, fluids, food, feces)
Shigella
Sea food. Attaches to the intestinal epithelium with flagella and releases enterotoxin and cytotoxin. Causes the nonstop activity of enzyme Adenylate cyclase (converts ATP to cAMP), cAMP causes the electrolytes to leave the cell, which causes water to leave the cell. Diarrhea. Fecal water contamination (remember these do quorum sensing)
Vibrio cholera
Seafood, watery stool, overactive ion pumping out of cells
Vibrio parahemolyticus
Oysters specifically (can cause toxic shock), watery stool, rash from skin water exposure
Vibrio vulnificus
Stiff neck, meningitis. Can take several months. Unwashed veggies, soft non pasteurized cheese, hot dogs. (70% fatal)
