What is PSE?
A
pale, soft & exudative pork syndrome –> genetic susceptibility, seen after & during slaughter

What is DFD?
A
dark, firm & dry pork syndrome –> prolonged transport, starvation before slaughter. Both produce lactic acid

What are the variations of microcirculation in local acute inflammation?
A
- vasoconstriction -> caused by serotonin
- vasodilation -> histamine, bradykinin, prostaglandins, vascular change ( –> exudate formation)
- increased vascular permeability -> by histamine & serotonin (–> fluid accumulates in tissues, swelling)
- passive hyperemia

What is hypotonic dehydration?
A
- loss of water lower than loss of electrolytes
Volume of ECF goes down & ICF goes up
Osmolality of ECF & sodium content decrease
PCV, concentration of haemoglobin & PLASMA PROTEINS ARE INCREASED
CAUSE: diarrhoea, sweating (eq), vomiting, renal insufficiency, Na loss

What is hypertonic dehydration?
A
- loss of water is higher than electrolytes
Volume of ECF goes down
Volume of ICF goes down
OSMOLALITY OF NA & ECF INCREASED
CASUSES: failure in water intake, fever, diabetes insidious

What is isotonic dehydration?
A
- loss of water is equal to electrolytes
Volume of ECF goes down
Volume of ICF no change
CAUSES: diarrhoea, vomiting, bleeding, lactic acidosis, dislocation od abomasum, burns
