What is acculturation?
adopting the traits of the dominant culture
What is ethnocentrism?
belief that one’s own culture is superior to all others, so these people view the world from their own cultural viewpoint
What are some dietary restrictions for orthodox judaism?
- often use kosher kitchens
- they do not eat meat with dairy
- do not eat pork products, dairy, meat “pareve” foods or shellfish
- no preparing foods on sabbath
What are some dietary restrictions for muslims (islam)?
- no alcohol, pork, coffee tea or soda (caffeine)
- may fast during Ramadan
- kosher

no caffeine (coffee or tea) or alcohol

- do not eat meat on ash Wednesdays and Fridays during lent
- no food or drink 1hr before communion
What does AA food preparation include?
frying in animal fats, and foods can be high in fat and sodium
What are AA at an increased risk for and what education should be provided?
- at r/f: type 2 diabetes, heart disease, hypertension, and obesity
- instead of animal fats use vegetable oils
