Corton is the only Grand cru that is able to produce both red and white wine in the Côte de Beaune. It is 160ha and is commonly attacked for a major variation in quality due to its massive size. The region is almost entirely red wine producing.

Explain carbonic maceration vs semi carbonic maceration?

A

Carbonic maceration- winemakers seal whole clusters or berries in tank and pump carbon dioxide over. In the absence of oxygen the berries undergo short intercellular fermentation, metabolising individual stores of glucose and malic acid to produce carbon dioxide and alcohol. During this process the tannins and anthocyanis(colour) move to the flesh of the grape from the skins to give the juice colour. This will continue until the grape reaches about 2% alcohol before it dies and the cell activity stops. The grapes then rupture or are pressed by the wine maker where the wine will then naturally ferment with yeast to dryness.

Semi carbonic maceration (more popular in Beaujolais) has no addition of carbonation and is added naturally. Whole clusters at the bottom of the tank are crushed by the weight of those above which will and ferment normally, this will produce carbon dioxide that will cover the berries above who will begin to ferment internally.
