Good quality youthful red burgundy 2-5 years old Pairing
Seared duck breast cooked rare particularly accented with red fruits like cherries or blackberries and beetroot with a light umami-rich broth like sukiyaki.
Fat content of the duck works well with the sharpness and the acidity of the Pinot Noir. Its ripe fruit offers a beautiful contrast with the richness of the meat. The sweetness of the fruit sauce will match the fruity nature of the wine while the umami broth will enhance the fruit character of the wine

Roasted Pheasant with sausage ragoût with baby potatoes, peas, carrots, shallots, red wine, truffles, mushrooms
Powerful expression and increased concentration of 1er Cru or Grand Cru Pinot Noir stand up to such a flavourful and hearty dish. The gaminess of the Pheasant. The softer tannin profile of the wine will match the smooth texture of the dish and not clash with the leaner Pheasant’s texture. The earthiness of Pinot Noir will highlight the truffles and the mushrooms in the dish.
White Burgundy pairing
Classic and timeless, simple and delicious skate wing a la grenobloise with the brown butter bringing out the buttery notes in the wine and the capers and the lemon matching the fresh acidity of the wine. For a richer wine like the fuller expressions of Meursault, you could even go with a hollandaise sauce to offer a richer texture.
