Candied Bacon & Artisan Cheeses
CHS PLATE
- Shareable appetizer for 2-3
guests with complementing sweet,
salty and savory flavors. - Each cheese has its own garnish.
- Creamy goat cheese w/berry jam and Marcona almonds
- French Feta w/Orange Honeycomb and Pistachio, And
- Rich Stracciatella (stretched mozzarella) w/sweet roasted grape tomatoes, EVOO, balsamic and sea salt.
- Highlight of dish is the extra thick cut candied applewood smoked
bacon! The crostini make for a great canvas for any of the cheeses!
Portions/Prepped: 5oz piece of bacon cut in half, 2 1/2oz Stracciatella,
2oz Feta, 1.75oz Goat Cheese. 2 slices toasted crostini cut into 1/3rds.
Classic Tomato Bruschetta

- Smothered with Stracciatella Cheese (the inside filling of
burrata cheese) - Topped with a sweet Grape Tomatoes, Shallots, Garlic,
White Balsamic Vinegar, and EVOO
Portion/Prepared: 2 toasted country sourdough slices, cut in half
Garnish: basil, balsamic glaze, Maldon salt
Drunken Shrimp

popular appetizers - 5 large shrimp wrapped in Bacon, atop fresh Guacamole
simmered in a Tequila Lime Butter Sauce - Finished with a fresh squeeze of Lime

- Ponzu-Ginger Vinaigrette: Ponzu - a Japanese ingredient (soy, rice vinegar, yuzu (a Southeast Asian Citrus Fruit)),
Ginger, Garlic, and Toasted Sesame Oil - Topped with Avocado, Sliced Radish, Scallion, a touch of Sriracha and Wasabi Cream sauce
