Why is Storage and Service important to wine?
Ensure the wine is in the best possible condition
What can result if wine is stored improperly?
Wines start to lose their character and develop faults
What are 3 important considerations regarding wine storage?
- Cool and constant temperature
- Dark environment
- If it has a cork, stored on its side
Why is constant temperature important?
Extreme heat and/or cold can damage wine
What can light and heat do to wine?
Cause it to taste stale and old
What is it important to keep corked wine on its side?
Keeps the wine in contact with cork
Prevents the cork from drying out
Dried corks allow oxygen into the bottle which destroys wine - it will taste old and stale
What is Service Temperature?
The ideal temperature for the wine to be poured
White, Rosé and sparkling are served chilled
Reds with a slight chill or at room temperature
Are service temperatures rigid and strict?
No personal preference should always be taken into consideration
What temperature range is appropriate for most styles of white wine?
45-50˚F
Sweet wines and sparkling wines like Sauterne should be served _______
