Smell: dried black fruits, desecrated tomatoes, old lily, bamboo shoots
Taste: bone dry/leathery
Feel: Tanin
Tastes Like: Less tannic cabernet or Seurat
Pair with: hamburger, latkes, lamb chop, steak.

We do. We have a Nero d’Avola from Sicily.
I want a crisp, bubbly, traditional sparkling wine. What would you recommend?
Although the Azimut is a cava Rosé it is our only sparkling wine that is made like traditional cava. It is our most bubbly and traditional.
Do you have any sparkling wine made with petnat fermentation?
We do- our Prosecco Col Fondo- Caneva de Nani
Explain pet nat style of bubble wine brewing…
There is no primary and secondary fermentation. The wine is warmed during primary fermentation and bottled during its primary fermentation. As it cools back down in the bottle it develops the bubbles

Smell: bruised yellow apple, Lee’s (the yeast)
Taste: Creamy, dry
Feel: The mouse is softer on this. Less crisp.

How should we open our champagne bottles?
Leave the cage on the bottle, get a server serviette, leave your thumb on top of the bottle and gently twist from side to side.
