Define hyper-oxidation
A
A technique of deliberately exposing the must to large quantities of oxygen before fermentation.

What does hyper oxidation do to the must, and why is it performed on some wines?
A
- it will oxidize compounds that oxidize easily, which turn brown as they do so
- stabilizes the wine against oxidation, after fermentation
- removes bitter compounds that come from unripe skins, stems, and seeds

Why would hyperoxidation not be used?
A
Hyper oxidation can destroy some volatile aroma compunds, and so is not suitable for aromatic varieties

What are the cost impacts of hyper-oxidation?
A
- takes time and some equipment to perform, and so has a small impact on costs
