It’s generally an undefined approach to winemaking, where nothing is added or removed. But it is accepted that it refers to a wine that is made with the fewest possible manipulations.

They claim that their wines are more expensive of terroir than those of conventional winemaking. However, winemakers who use some SO2 are ensuring that their wines show at their best.
