Baked vanilla bean custard with a caramelized turbinado sugar over a fruit gelee topped with fresh fruit.

Valrhona Chocolate Dome (70%-30%) topped with edible gold. Inside is a Banana Semifredo with chocolate crumbles. A banana foster sauce heated to 150* will be poured table side over the dome infusing the chocolate with the semifredo.
Semifredo “Semi Frozen” - a French style dessert. Principal ingredients are egg, cream and sugar.

•The term ‘Bomba’ refers to the traditional Italian hemispherical ice cream dessert, though this interpretation of the dessert are non-traditional.
