Roasted Asparagus. Served with a Bonito Aioli, then topped with a Brown Butter Hazelnut crumble and trout roe

JAPANESE SWEET POTATO
8oz of Japanese Sweet Potatoes, Served with Chimichurri and Miso Caramel glaze
Chimichurri: EVOO, Lemon Juice, Shallot, Garlic, Oregano, Cilantro, Parsley.
Miso Carmel: Brown Sugar, Apple Cider Vinegar, Butter, Red Miso, and OJ.
VEGETABLE FRIED RICE
12oz White Rice, Roasted with Egg, Peas, Carrots, Sesame Oil, Ginger, Garlic, and Oyster Sauce. Served with Yum Yum Sauce.
UNION FRIES
Twice Fried Shoestring Fries. Topped with Duck Fat Powder. And served with Ketchup
Duck Fat Powder: Powdered Duck Fat (duck fat mixed with maltodextrin and corn starch), Garlic Powder, Onion Powder, Rosemary, and Salt.
TWICE BAKED POTATO
3 half Idaho potatoes. Smoked Creme Fraiche, Gouda Cheese, Rendered Bacon, Scallions and Parmesan. Garnished with Scallions.
