The bulb, foliage and seeds of this plant are used in various ways. Shaved fennel uses the bulb, the foliage or “fronds” are used as a fresh herb. Dried fennel seed as a spice. Flavor similar to anise
Crimini mushrooms
Portobello mushrooms that have not reached maturity. “Baby bellos” the flavor is richer and texture is meatier than the common white mushroom
Radicchio (rah-dee-kio)
A leaf chicory sometimes known as Italian chicory. It has a bitter and spicy taste which mellows when it is grilled or roasted. It is often used raw as an accent flavor in salads. When cooked it pairs with rich cheeses, salty meats and fruits (apples and figs)
Truffle
Edible underground mushroom. They are very aromatic to the taste, described as garlic and cheese combo. Very unique flavor described by Japanese as umami “the fifth taste”
