Genoa salami
Normally made from pork but may also contain beef, or be all beef and seasoned with garlic, salt, black and white peppercorns, fennel seeds, and red or white wine. Has a fermented flavor.
Capicolla
Traditional Italian cold cut, in Itslian “salume” made from pork shoulder or neck and dry cured whole.widely known as cured ham or prosciutto.
Pancetta (pan-chetta)
Italian bacon. Pork belly meat that is salt cured, seasoned with such spices as nutmeg, fennel, peppercorns, dried ground hot peppers and garlic then dried for 3 months
Porchetta (pork-eta)
A fatty moist boneless pork roast in Italian tradition. Usually heavily salted, stuffed, deboned, pit roasted, seasoned with garlic, rosemary, fennel, or other herbs
Prosciutto
Dry cured ham thst us usually thinly sliced and Served uncooked
Prosciutto cotto
Italian cooked ham. Differs from most hams thst have origins in the America that are typically smoked
