what is value adding
Making a raw commodity more attractive and convenient for the consumer to use
4 ways to value add
- Changes to nutritonal content
- Packaging
- presentation and service
- additional processing
- Changes to nutritonal content
This is usually done by fortifying food
by fortifying food it makes it more appealing to those who are concerned about the healthiness of the product.
e.g. someone will pick an added calcium milk over normal milk if they are concerned about their calcium intake
- Packaging
packaging may add to the value of food if it:
- is resealable
- is safe for food to be heated in or saves time
- is in convenient serving sizes
- is reusable
- is recyclable
- extends shelf life
- presentation and service
If a food is presented well it will add value since it looks more expensive
e.g.a pre-made cake that is melting vs a warm, fresh pre-made cake
- additional processing
if a food is processed more it can add value.
e.g. cows milk to cheese or butter
