What is CONTAMINATION?
When something gets into food that should not be there,
eg. Microorganisms or solid mater.
What is BACTERIA?
A microorganism, a living thing.
What is FOOD HYGIENE?
Ensuring food is safe to eat.
What FOUR foods develop mould if they store for too long or are stored incorrectly?
- Bread.
- Cheese.
- Oranges.
- Grapes.
What MICROORGANISMS are in Bread -Bacteria, Mould, Fungus or Yeast?
Yeast.
What MICROORGANISMS are in Quorn -Bacteria, Mould, Fungus or Yeast?
Fungi.
What MICROORGANISMS are in Yoghurt/Probiotic drinks -Bacteria, Mould, Fungus or Yeast?
Bacteria.
What MICROORGANISMS are in Blue Cheese -Bacteria, Mould, Fungus or Yeast?
Mould.
What FOUR conditions do bacteria need to survive and multiply?
- Food.
- Moisture.
- Warmth.
- Time.
What types of food do bacteria prefer to grow in? Give some examples of these to!
Bacteria prefer to grow in food which is high in protein, vitamins and minerals. Some examples of these would be:
- Chicken.
- Meat.
- Fish.
What happens to bacteria between 64-100 degrees?
They are DESTROYED!
What happens to bacteria between 5-63 degrees?
This is the danger zone, bacteria multiply RAPIDLY here!
What happens to bacteria between 1-4 degrees? (In the fridge!)
Bacteria multiply SLOWLY in the fridge!
What happens to bacteria between at -18 degrees? (In the freezer!)
Bacteria are DORMANT in the freezer!
What does DORMANT mean in this context?
It means: the bacteria are alive but are not able to grow. Normal function is suspended for a time ie. They cannot grow and they cannot multiply!
