Describe green tea preparation
Leaves are withered and steamed to inactivate enzymes, lastly its pressed and dried
Describe oolong tea preparation
Partially oxidized then pan fired at a high temp. Rolled and allowed to dry
Black tea preparation
Leaves are withered (exposed to air for 6-18 hours) moisture content is reduced.
Then it’s rolled and macerated
Allows a lot of oxidation (fermentation), leaves are dried and become dark
White tea preparation
Minimally processed. Made from buds that are not fully opened
Leaves are withered, steamed, and dried; but not rolled
What is chai tea
A blend of black tea with spices and herbs
What is general recipe for chai tea

Cloves, cinnamon, star anise, and cardamom

More bitter and astringent than black or white tea
