Sensory Flashcards
What are the three sensory testing methods
Triangle test
Duo-trio test
Flavor identification
Describe triangle test
Obtain 3 Unknown samples try to identify the one that different
Describe duo-trio test
3 total samples
Sample the control and then sample other two and determine which one is the same as control
What did PTC taste like
Very bitter
Similar to aspirin
Thiourea taste like?
Somewhat bitter
Dry “match” taste
Sodium benzoate taste
Slight sweetness
Similar to control
Describe flavor identification sampling
Taste 3 samples and describe flavor
Describe the gene related to PTC taste
Gene for bitter taste receptor has three different variants. If the the shape of receptor is abnormal some may not taste bitterness from PTC
What are the three gene types for PTC taste
TT (dominant, dominant) = very bitter
Tt (dominant, recessive) = somewhat bitter
tt (recessive, recessive) = not bitter
What is the correlation for preferences of PTC
Individuals may prefer healthful foods like green tea and cruciferous vegetables
What were the 4 test strips used in sensory testing
Thiourea
PTC
Sodium benzoate
Control
