New York Wagyu

A

16 oz. New York Wagyu from Margaret River Wagyu Beef, Australia. Grade eight/nine. Brushed with steak butter and served with a side of chimichurri (cilantro, parsley, extra virgin olive oil, lemon, shallot, fresno chile, red wine vinegar, garlic).

Notes: steak knife needed.

Tomahawk Steak

A

32 oz. bone-in Tomahawk steak from Mort & Co. Phoenix Beef, Australia. Grade six/seven. Brushed with steak butter, served with a side of chimichurri (cilantro, parsley, extra virgin olive oil, lemon, shallot, fresno chile, red wine vinegar, garlic).

36-Hour Prime Brisket Birria

A

Slow-cooked (sous vide, 36 hours) prime beef brisket, served sliced in a consomme of maui onions and beef stock and garnished with micro cilantro. Birria paste (guajillo chile, ginger, garlic, chile de arbol, chile california, cloves, allspice, star anise) is added to the piping-hot skillet for aromatics and a touch of heat, then the brisket and the consomme are poured into the mix.

Notes: can be made without cilantro garnish.

Maine Lobster

A

2 lbs. of Maine lobster, flash-poached, broken down, then grilled. Brushed with steak butter and served with a grilled lemon half and drawn butter.
