Chocolate Cake
Triple-layer chocolate cake (flour, sugar, cocoa powder, buttermilk, vanilla, egg) stacked with chocolate mousse (chocolate, canola oil, vanilla, milk, heavy cream, sugar, gelatin) and chocolate ganache (chocolate, butter, corn syrup, heavy cream) filling. Double layers of chocolate ganache and chocolate glaze (sugar, chocolate, cocoa powder, heavy cream, gelatin) give the cake its structure. Garnished with luxardo cherries and edible gold flake.
Notes: steak knife needed. Not vegetarian as it contains pork gelatin.

Flan
House-made flan (egg, condensed milk, half & half, vanilla, anejo tequila), finished with lime zest and sliced strawberry.
Notes: can be made without strawberry and lime zest. Cannot be made without the tequila.
ALLERGENS: alcohol (cooked), dairy, citrus.
Churros
Five pieces of cinnamon sugar-dusted, deep-fried pastry dough (flour, sugar, butter, eggs, vanilla). Paired with strawberry prickly pear sauce (prickly pear puree, strawberry puree, sugar, cornstarch, lemon juice), and warm chocolate (chocolate, heavy cream, sugar, cocoa powder, cayenne, cinnamon). Garnished with a marigold flower, dollop of vanilla bean whipped cream (heavy cream, powdered, vanilla bean paste).
ALLERGENS: gluten, dairy, eggs, citrus, soy, capsicum.
Pink Champagne Sorbet / Margarita Sorbet
Fossilman’s, topped with seasonal berries and a mint sprig.
Notes: mark with a spoon.
ALLERGENS: citrus.
Ice Cream Sundae
One scoop each of Fossilman’s horchata, Oaxacan chocolate, and dulce de leche ice creams. Topped with warm chocolate sauce (chocolate, heavy cream, sugar, cocoa powder, cayenne, cinnamon), strawberry prickly pear sauce (prickly pear puree, strawberry puree, sugar, cornstarch, lemon juice), dulche de leche sauce (sweetened condensed milk), crushed nut mix, crushed Heath chocolate bar (sugar, vegetable oil, butter, almonds, milk, chocolate, soy), mini sugar cones (wheat flour, brown sugar, vegetable oil shortening, soy), and vanilla bean whipped cream (heavy cream, powdered sugar, vanilla bean paste).
Notes: mark with a spoon.
