Chile Toreados

A

Blistered jalapeno and Huero chile peppers, lightly dressed with a yuzu, dashi, soy, lime, garlic, chive, and rice vinegar sauce. Topped with a squeeze of fresh lime and maldon salt. Served with lime wedges.

Notes: NOT gluten-free. Soy sauce contains wheat gluten. Can be made gluten-free and vegan without the dashi soy.

A

A

Grilled broccolini tossed in salsa macha (canola oil, morita chile, pasilla chile, ancho chile, guallio chile, chile de arbol, peanuts, lime juice, cilantro). Garnished with candied peanuts (water & sugar coating) and fried garlic chips.

Notes: can be made with no sauce or the sauce on the side.

A

Slow-cooked white rice with corn stock, corn, butter, white wine, bay leaf, shallot, onion, and DOP-aged parmesan. Sauteed with our mushroom mix (chanterelle, Hen of the Woods, brown and white shimeji), and white truffle oil. Topped with crispy DOP-aged parmesan chicarones and shaved black truffle.

A

Pan-roasted chanterelle, Hen of the Woods, brown and white shimeji mushrooms, picked up in morel butter (butter, dried morel mushrooms, smoked Maldon sea salt, roasted garlic, chipotle, sugar, tomato paste), on a bed of salsa roja (guajillo chile, roma tomato, white onion, garlic, sugar, cinnamon, chile california, habanero). Garnished with maldon salt and nutritional yeast.
