Scottish has always relied on peat-fire to dry their malt, as Irish mostly rely on wood-fire.
In 1725, the English government implemented a taxe on malting barley. Why did they di that and what impact did it have on the whisky industry?
They were taxing the finished product, but most of the industry was moving underground to avoid paying taxes. The government then decided to put a taxe on the malting of barley, which was a difficult step to hide (fire; outdoor needed).
It impacted the technics Scottish and Irish had to make their whiskies. Scottish started to dry their malt during the night, which is the origin of the term ‘‘moonshine’’.
The Irish simply lowered the proportion of malted barley in their whiskies.
