California
Mostly too warm but some good wines come from the cooler Napa Valley (early harvest). These wines are sometimes made in contact with oak to add body and flavour.
South Africa
Constantia- cooled by sea breezes. It produces refreshing sav B with ripe tropical fruit and herbaceous aromas
Elgin- cooled by altitude. Typically show green fruit (apple) and sometimes aromas of wet stones.
Australia
Margaret River- concentrated herbaceous aromas (grass)
Adelaide Hills- fresh and fruity with a broad range of flavours from citrus and tropical fruit
New Zealand
Marlborough- Cool to moderate climate.
Often made by blending different sights. Broad range of flavours. Lemon, peach, passion fruit, green bell pepper and asparagus.
South of France
Mostly too warm but areas cooled by altitude produce the best wines. Here the Sauvignon Blanc will be dry, high acidity and tropical fruit (passion fruit) and herbaceous notes (grass)
Bordeaux
Bordeaux AOC- fresh aromas of frass and green apple
Graves AOC and Pessac-Léognan AOC are more concentrated and complex, typically blends of sav b and Sémillon. Often matured in oak and will develop complex flavours of honey and nuts in bottle
Loire
Sancerre AOx and Pouilly-Fumé AOC- cool climate. Dry wines with high acidity and aromas of green fruit (apple), herbaceous notes (grass, asparagus) and sometimes wet stones.
Touraine AOC- fruity and inexpensive
