What are the major styles of Rum?

A

Light Rum
- mass produced by continuous distillation
- short cask aging
- charcoal filtered after aging to remove color (and any flavor, HA!)

Cachaca
- light rum made from sugarcane
- produced in Brazil

Dark Rum
- dark in color
- -color often comes from caramel
- good pot stilled version do exist

Demerara Rum
- Molasses base
- made in Guyana only
- often aged for extended periods of time
- -(sometimes 10+ years)

Rhum Agricole
- sugarcane only! (molasses is forbidden)
- French style produced mainly in Martinique AOP
- -Southermost AOP in France!

Spiced Rums
- rums that are spiced…

- 18 months min in Oak

Vieux
(aka: Hors d’Age)
- 3 years min in an Oak
- -casks must be less than 650 liters
- 325 min g/hl in volatile elements other than ethyl and methyl alcohol (again…huh?)
