Lincoln County Process?

Where is it used?

A

This is the process of filtering Tennessee Whiskey before it enters its maturation process in charred new oak barrels.

The whiskey is filtered through charcoal made from Sugar Maple Trees. The sugar maples are slowly charred and then pulverized to bean size in large grinders.

The whiskey is either poured, slowly dripped through, or steeped with the charcoal to filter out impurities.

George Dickel even chills their whiskeys to 40°F since he believes he made better whiskey in the Winter months.

Benjamin Pritchard is the lone Tennessee Whiskey producer who does not use this process.

A

A portion of a spent mash is added to a newly fermenting mash.

This is a requirement of Tennessee Whiskey. It is also often used in Bourbon.

What is Straight Whiskey?

A

Indicates 2 years min aging in “appropriate” cask.

No flavoring or coloring compounds may be added after fermentation of the grain. Lincoln County Process is allowed, though.

- Any Whiskey produced in the USA can be labelled as Straight Whiskey.
