Protein Flashcards
What is the function of protein foods in the body?
Protein is required for growth and repair in the body. Once it has been used for growth and repair, it is used for maintenance.
How many amino acids are proteins made up of?
22 amino acids
How many amino acids are indespensible to growth and repair?
ten are indispensible for growth and repair in children. 8 are indispensible for growth and repair in adults.
What do amino acids combine together to make in the body?(name 5)
Muscle protein, hormones, enzymes, skin protein, antibodies, nails, haemoglobin, cell membranes.
What are the sources of protein where all the essential amino acids are found?
Animal tissue and soya bean. (HBV) except from gelatine.
What are the sources of protein found where it lacks one or more of the amino acids?
Plant sources, other than soya bean. (LBV)
What is complimentation?
This is when the amino acids that are limited in one are provided by the other. e.g. lentil soup and bread or beans on toast.
What sorts of plant foods can protein be found in?
bread, rice, cereals (oats, wheat) nuts, quorn (mycroprotein), beans.
What sorts of animal foods can protein be found in?
Meat, shellfish, poultry, fish, dairy products such as cheese, egg, milk, yoghurt
What source of protein has high biological value? (HBV)
Animal sources
What source of protein has a low biological value? (LBV)
Plant sources
What alternative protein sources are there?
TVP-textured vegetable protein, Quorn-mycroprotein which is related to mushrooms. TIVALL- made from vegetable and wheat protein. TOFU AND BEAN CURDS- Made from soya beans.
What are the nutritive values of alternative protein sources?
They are very low in fat , very high in protein, they are enriched with vitamins and minerals, they have the same nutritive values as meat so they are very beneficial to meat free diets.
Who are alternative proteins eaten by?
1.people who dont want to eat food sourced from animals due to religious, moral and ethical beliefs. 2.people who are conscious of healthy eating 3.people who want more of a healthy diet
What are the ethical considerations with alternative protein sources?
They are made in a controlled environment which helps pollution to keep to a minimum. They are also produced organically meaning its less harmful to the environment. They are quicker and cheaper to produce than meat which is important to poorer countries.
