Name 3 methods of primary processed milk
Pastearized, condensed, sterilised,
What is pasteurized milk?
when it is heated up to 72 degrees for 15 seconds and cooled rapidly to 10 degrees or below before being packaged.
What is sterilised milk?
This is when its homogenized and bottled, sealed and heated to 110 degrees for 30 minutes which alters the taste.
What is condensed milk?
This is evaporated milk which isn’t sterilized. It has extra sugar added to preserve it which makes it thick and sweet.
What nutrients does milk contain?
Sugar, Vitamins A and B, Calcium, Protein, Fat
In secondary processing of milk, what dairy products can be made?
Butter, cream, cheese, yoghurt
How is butter made?
By churning cream, may be added to margarines to improve flavour.
How is cream made?
The amount of liquid that is removed from milk will determine the type of cream e.g. single, double, whipping, clotted.
How is cheese made?
This is milk in its solid form, its made up of protein fat and water and depends on the type of milk and bacteria used.
How is yoghurt made?
By adding a bacterias which aren’t harmful to us. e.g. natural, low fat, fruit flavoured.
