Both of the insides and the environment outside are watery so phospholipids in cell forms a double layer with a hydrophilic head of the molecule pointing towards outside of the cell and watery area. Hydrophobic tails point into the middle of the membrane.

Glycerol in waxes is replaced by a longer chain alcohol, making them (waxes) more complex structures. Waxes are more solid than fats at room temperature.
