Pasteurisation Flashcards
When was Louis Pasteur born?
27 December 1822.
Where was he born?
France.
What is he famous for?
He was the first person who realized that microbes cause meat that was left exposed in open air to turn bad.
What did he also discover?
He also found that some bacteria caused wine to go sour.
What did he discover when wine is heated to 55 degrees Celsius?
He discovered that if wine is heated up to 55 degrees Celsius for some time before putting it into bottles it does not get spoiled by microbes.
What was the name of the process known as?
Pasteurization.
What did he use the same process on what from getting spoiled?
Milk
Today what is nearly all our milk?
Today nearly all our milk is pateurised.
What is the process for pasteurized milk?
Pasteurized milk is heat for a short time and then rapidly cooled. The heating kills some but not all microbes.
What is the process for sterilized milk?
Sterilized milk is heated to higher temperatures for a longer period of time so that all microbes are killed.
How can sterilized milk be kept fresh for?
Weeks as long as cartons are not opened.
What was the significance of Pasteurs invention?
It was the first step towards food preservation.
What is food preservation?
Process used to protect food against microbes.
Did u know that…..
55 degrees Celsius is about the hottest water that you can dip your fingers into and snatch them out without getting hurt.
Which milk out of the tree can be kept the longest…. Condensed, sterilized and pateurised?
1st: condensed because it can last up to 3 years without opening it and it won’t get spoiled by microbes.
2nd: sterilized because it can be kept fresh for weeks as long ad cartons are not opened.
3rd: pasteurized because it will last for a few days before getting spoiled by microbes and not all microbes are killed in pasteurized milk.
