2011 Restaurant Mandate
Restaurant chains with 20+ outlets must post calories (menus or menu boards) and must provide additional nutrient info when requested
Enrichment
Pertains only to refined grain products
“replacement” of thiamine, riboflavin, niacin and Fe that was lost during refinement
Fortification
Attempt to prevent deficiencies through “addition” of one or more nutrients
Required:
- Vit D added to milk
- Vit D and A added to low fat dairy products
- Folic Acid added to refined grains
Not Required:
- Iodine added to salt
- Ca added to OJ, Cocoa
Functional Foods
Food, fortified foods, enhanced food products that may have health benefits beyond the effects of the essential nutrients they contain
Removal of potentially harmful components (Cholesterol-free eggs)
Increasing amount of nutrients
Adding new beneficial compounds to food
Not regulated, no specific standards
