When wheat is processed some nutrients are removed so it is mandatory to fortify all wheat flour

- bran (fibre)
- endosperm (B vitamins, starch)
- scutellum (B vitamins)
- germ (B vitamins, fat, iron, vitamin E)
What is rice a good source of

- fibre (if it’s whole grain)
What is maize a food source of
- starch

What are oats a good source of
- starch + fibre

Nutrients found in fruit
- carbohydrates: found in sucrose and fructose in ripe fruit + fibre is found in skin
- vitamin A: apricots
- vitamin C: blackcurrants, citrus fruits
Nutrients found in veg
- protein: pulses and beans (LBV), soya beans (HBV)
- starch and + fibre
- vitamin A: carrots and dark green veg
- B vitamins: pulses
- vitamin C: sprouts, cabbage, spinach

- water
- protein (casein)
- fat
- carbohydrates (lactose)
- vitamins + minerals
What is bad about vitamins found in veg
Most are water-soluble and destroyed by heat

Vitamins: vitamin A, semiskimmed had less as the fat is removed and A is fat-soluble

Alternatives to cows milk
Rice milk
- low in fat and calories
- easily digested source of carbs
- less proteins and essential fatty acids than cows milk
Oat milk
- rich in folic acid and vitamin E
- low in saturated fat
- good source of fibre
- oats can help reduce cholesterol
Soya milk
- lower in fat content than cows milk
- has HBV protein
Nutrients in cheese
Protein: HBV
Fat: has both saturated and unsaturated fats (harder the cheese the more fat)
Vitamins: vitamin A
Minerals: calcium
Nutrients in yoghurt
Same as milk

- HBV
- proteins found in the connective tissue are collagen and elastin
- myoglobin is what gives meat its red colour
Fat
- keeps meat moist when it’s cooked
- has saturated and unsaturated
Vitamins
- fat soluble vitamins (A)
- B vitamins but they’re water soluble so could leak into cooking liquid
Minerals
- iron

- shellfish: prawns
- white fish: cod
- oily fish: mackerel
