how do you make blue cheese blue?

A

cheese is treated with mould.
as the cheese matures the mould grows.
creates blue viens within the cheese, giving the cheese its characteristic flavour.

how do you make soft ripened cheese?

A

p.camemberti is allowed to grow on the outside of the cheese causing the cheese to age from the outside in, forming a soft white crust and runny inside.

how do you make rind-washed cheese?

A

ripens inwards but they are washed with brine and other ingredients eg: beer, wine which contain mould.
makes them attractive to bacteria which adds to the flavour.
