surface of cut fruits such as apples and on the surface of cut vegetables such as parsnips.

why does it happen?
A
cell enzymes reacting with air (oxidation.)

what can it be prevented (inhibited) by?
A
blanching cut fruits and veg in boiling water.
blanching vegetables before freezing, inhibits the enzymic action that can discolour food.
dipping fruit or veg in acid eg: lemon juice.
removal of air by submerging in water.
cooking eg: stewing fruit, roasting parsnips.
