making bread Flashcards
1
Q
what is needed to make bread rise?
A
yeast
2
Q
where yeast respires a———-, it produces CO2, which helps the bread to rise
A
anaerobically
because of the co2 bubbles
3
Q
aerobic respiration word equation
A
4
Q
A
5
Q
explain the steps of making bread:
A
- a bread is made using water, yeast, flour, sugar
—> then the bread needs to rise - enzymes turn the carbohydrates in the flour into sugars
- these sugars are used in aerobic respiration
- then the oxygen runs out
ANAEROBIC respiration starts (fermentation) producing carbon dioxide and ethanol - the co2 is trapped as gas bubbles, causing the bread to rise
- the temperature will change enough to kill the yeast
6
Q
anaerobic respiration equation
A
glucose (C6H12O6) –> ethanol + carbon dioxide (CO2)
7
Q
although ethanol is produced, why is bread not alcoholic?
A
the alcohol is boiled away by the high temperatures
