What is the function of bile in digestion?
Bile emulsifies fatty acids toincrease surface area for lipases.
How are fatty acids kept stable to prevent oxidation?
antioxidants such as vitamin E, BHA, and BHT remove free radicals and prevent reaction of those oxygens with fatty acids.
What is the main sterol in plants?
beta-sitoserol
What are the benefits of eating plants sterols?
They can compete with cholesterol and reduce the effect of cholesterol.
What is the lipase found in the mouth?
Lingual lipase
What is the lipase found in the stomach?
Gastric lipase
How are lipids digested in the small intestine?
1) Cholecystokinin is released stimulating bile release.
2) Pancreatic lipase is secreted
3) Hydrolysis of triglycerides and phospholipids takes place.
