As legend has it, a German bishop was touring central Italy in the 1100s. He had dispatched a scout to travel in advance of his caravan to find the best wine of the region. This scout was supposed to mark any inns or taverns that poured exceptional wines with the term “Est”, which means “it is” whenever he found any quality wines. Apparently the scout really enjoyed the wines of Montefiascone because he wrote a large Est!Est!!Est!! on the door of a local tavern.
