- Ex: Fruit for smoothies, veggies for sauces

- A slow cooking oven
- Used to show cook food like: Soup stocks, slow-cooked meats, fermented veggies, etc.

- Used to keep hot food @ 135 degrees while moving food items
(Basically used to help food stay @ a safe temp for serving)
Hot box
Used for keeping cooked food hot by circulating hot water or steam beneath the food containers
Steam table
- Used to prep food and beverage items
- Size varies between 5-80 gallons
- Cooks large quantities of food
Steam-Jacketed Kettle/Steam Kettle
- Steam cooks food
- An electrically charged compartment that is fed water and heat to create steam
Steamer
Used to cook or heat food or beverages quickly using high frequency electromagnetic radiation
Microwave oven
- Warmed by a gas or electric heat source
- Used for baking, roasting, &/or drying food
Conventional oven
- Cooking surface used for stir frying, grilling, searing, etc.
- Runs off of gas or propane

-Electric or gas appliance that melts solid fat
