Fermentation
A catabolic process that makes a limited amount of ATP from glucose (or other organic molecules) without an electron transport chain and that produces a characteristic end product, such as ethyl alcohol or lactic acid.
Glycolysis
A series of reactions that ultimately splits glucose into pyruvate. Glycolysis occurs in almost all living cells, serving as a starting point for fermentation or cellular respiration.
Four stages of the physiological response curve:
Lag; period of time for reactions to begin.
Log; when reactions proceed at a maximum rate.
Stationary; the time where the rate of reaction plateaus, due to an accumulation of end products or lack of substrate or reagents.
Death; the quantity of the dependent variable that is produced is outnumbered by the quantity that is consumed or degraded.
Linear rate of reaction
Measured against the log phase of the physiological response curve.
