How is Vin Jaune made?
- Wine is matured in old barrels with ullage allowing oxygen exposure and surface yeast to develop
- aged in barrel for a minimum of 60 months (5 years)
- may not be sold until 6 years and 3 months after the vintage
- must be bottled in Clavelin
What is Sous Voile?
Wines that have been maturing under floor as with Vin Jaune, but are removed early from the barrel. They have spent a shorter time that Vin Jaune gaining flor characteristics.
Usually labeled “tradition”
What is Ouillé?
Wines aged without ullage (topped up, no oxygen). Aka “reductively”
