Steep stony slopes with a southerly aspect, which maximize heat and sunlight
How are vineyards worked?
By hand and on the most extreme slopes equipment has to be maneuvered into place by winches
On these steep slopes how are vines trained?
Head pruned, individually staked and the canes tied in at the top of the stake to maximize grape exposure to light and circulation of air
What happens when vineyards are located near a river?
Reflected sunlight can help grapes to ripen and the air movement created by flowing water can help protect against frosts
What are wines classified by?
Must weight
(Level of sugar in grape juice)
Nearly all wines labelled Pradikatsweine will have what?
Residual sugar
What are Kabinett wines?
-Most delicate Pradikatsweine
-Rieslings made in this style will be light in body with high acid, flavors of green apple or citrus fruit and balanced with residual sweetness
How are the best sweet styles of Kabinett wines made?
By stopping fermentation early , before the yeast has converted all of the sugar in the juice to alcohol
German PDO wine, dry red, white all quality levels?
Qualitatswein
What is Spatlese?
Made in the same way as Kabinett, but they are more concentrated, riper, have more body, alcohol and where relevant sweetness compared to Kabinett wine from same region
-Citrus and stone fruit aromas (peach + apricot) common for Spatlese made from Riesling
What is Auslese?
-Made from individually selected extra ripe bunches of grapes
-Whether dry or sweet they are richer and riper compared to Spatlese wines of the same region
-Regardless of style, noble rot can play an important part in the flavor profile of these wines

-Noble rot is essential to achieve the must weights necessary for TBA
-Not essential for wine labelled BA
*Noble rot is typical for these wines
*These wines are sweet, low in alcohol, flavors of honey, dried stone fruit, candied peel, flowers
What is Eiswein?
-Noble rot, NOT a key component of this style
-Focus is on varietal purity
-Fine balance between acid and sweetness
-Winemakers try to maintain varietal flavors by: Using carefully selected yeast, handling the juice with care and avoiding processes that could mask the flavors of the grape
