What is a fortified wine?
Wine with the addition of spirits to arrest fermentation.
What are the categories of fortified wine?
Vin de liqueur- wines fortified before fermentation
Example: Pineau de Charente
Vin Doug Naturel- wines fortified after fermentation has begun or is completed.
Examples: Port, Sherry, Madeira, Marsala
What is the purpose of fortification?
Ensure microbiological stability precluding further fermentation
- Kills bacteria
- adds body,ageability and durability
What are the 3 methods used in fortification?
- Mutage
- After complete fermentation
- Mistelle
What is mutage?
Adding spirit before complete fermentation thus leaving residual sugar.
Example: Port
What is Mistelle?
Grape must is fortified prior to fermentation
Example: Pineau des Charantes
