What happens to the bacteria (lactobacillus) in yoghurt production
A
They ferment turning the lactose sugars in milk into lactic acid which causes the milk as it ferments to thicken into yoghurt texture

What does yeast do in food production
A
Through the process of fermentation yeast converts sugars into carbon dioxide and alcohol. This is used to make alcohol and to make bread rise.
