Mixed Greens Salad

A

This salad is on the dinner menu and is the salmon salad from brunch but without the salmon. It has the insalata verde lettuce mix, shaved red onion, shaved fennel, cherry tomato and is tossed with the steak salsa verde, lemon juice and EVOO

Kassi Chopped Salad

A

Iceberg Lettuce, Red Endive, Celery, Peas, Snap Peas, Snow Peas, Pepperoncini, Radish, Provolone Piccante, Crispy Prosciutto, White Balsamic Vinaigrette

Iceberg and red endive chopped into half inch pieces then tossed with radish, raw celery, peas, snap peas, snow peas, sliced pepperoncini (hot peppers), salsa verde and a white balsamic vinaigrette (white balsamic vinegar, dijon, shallot, canola oil, olive oil) and topped with provolone piccante cheese and crispy prosciutto.

Substitutions: Any individual item can be left out of this dish. Can be served with just lemon and olive oil.

Caesar Salad

A

Green and Red Little Gem Lettuce, Caesar Dressing, Shaved Parmigiano Reggiano, Toasted Seeds and Breadcrumbs

Red and Green gem lettuce is dressed with a Caesar dressing (egg yolks, anchovy, Dijon, lemon juice, red wine, garlic, Worcestershire sauce, Parmigiano Reggiano, canola oil). The salad is topped with pistachios that have been mixed with hemp seeds, black and white sesame seeds, pumpkin seeds, poppy seeds, parmigiano reggiano, breadcrumbs, butter, salt and pepper.

Shaved parmigiano reggiano garnishes the salad

Substitutions: Any individual item can be left out of this dish. Can be served with lemon and olive oil.

Beet Salad

A

The spread on the bottom of the plate is a kale and pistachio pesto. The salad on top is roasted golden beets, belgian and red endive and watercress tossed with lemon juice and EVOO. It is garnished with seeded breadcrumb and sheep’s milk feta.
