Describe the process behind Roederer Rose
Pinot noir is cold soaked in chardonnay must for a week, with no crushing or fermentation. The must is drained, the pinot is pressed, and the must combined. The must is then adjusted with extra-acidic chardonnay juice, as the pinot noir was picked for ripeness.

Est 1584 Aÿ, though were not making sparkling wine at the time. Celebris, 1988, is extra brut, and is produced in blanc de blanc, rose, and blends.
Veuve Cliquot
Est 1772, Reims. Barbe Nicole-Ponsardin (Veuve Cliquot Ponsardin) took over the business in 1805. Ponsardin is credited with inventing the riddling table, allowing mass-production of champagne. La Grande Dame, 1962, is pinot noir dominant, about 60/40. Cave Privee spends up to 17 years on lees.
