Describe the production methods from the vineyard to winery of Icewine

A

Vineyard:Healthy grapes are left hanging on the vine into the winter months. When freezing temperature arrives, the water in the grape turns into ice, and these grapes will be picked.

Winery:To retain the purity of the wine, grape and juice need to be handled carefully. The juice must be relatively clean before fermentation to ensure there is nothing in the juice that could mask the fruit flavours, a gentle method of clarification will usually be used such as settling. Inert vessels and selected yeast are commonly used. The fermentation stops naturally when the yeast has converted as much sugar into alcohol as it can, resulting in a wine low in alcohol, balancing acidity and sweetness, and focusing on a variety of purity.
