What is the only Premier Cru Chablis vineyard that touches a Grand Cru vineyard?
Vaulorent
“Lieu-dit of Fourchaume, but not contiguous to the rest of the vineyard due to the ravine created by the Ru de Fontenay. Borders Les Preuses to the south. It is the only 1er cru to touch a Grand Cru vineyard.”
List 5 top producers of Chablis and whether they use oak or not.
François Raveneau-
Style / Vinification Techniques: Harvesting has always been done by hand. Yields can be very different from vintage to vintage with 45 hl/ha in 2000 and 2001, 50 hl/ha in 2002, and 35 hl/ha in 2003. Only ambient yeasts are used for fermentation. Fermentation lasts two weeks in cuve, and then the wine goes through malolactic fermentation. The wines are aged in old oak barrels and feuillete for 18 months.
Vincent Dauvissat
Brief Description of Style & Vinification Techniques: Vincent prefers “natural farming,” using little vine treatments. All grapes are hand harvested, with grapes being pressed whole cluster. Fermentation happens in enameled steel and aging is always in oak. Vincent prefers to age the wines in 6-8 year-old barrels. The wines go through malolactic fermentation spontaneously, and tartrates are precipitated naturally. Unlike most producers in the region Vincent does not perform bâtonnage on his wines.
Domaine William Fèvre
Style / Vinification Techniques: Yields are kept low, and all harvesting is done by hand. All of the wines in the line-up see some aging in neutral oak barrels, which are 6 years old on average. All wines ferment with ambient yeast and go through malolactic fermentation. The grands crus wines see 60 to 70% aging in neutral French oak, and the rest stainless steel. They age between 12 and 15 months in total with 4-6 months on their lees in barrel, then the rest of the time in stainless steel until bottling. For the premiers crus, 30 to 50% of the wine is aged in oak, with the rest in stainless steel. They see the same amount of time in barrel, with the rest of the 10-15 months aging in stainless steel. The AC Chablis sees 10% in two to three year old oak.
Louis Michel & Fils
Brief Description of Style & Vinification Techniques: The estate practices mostly organic viticulture in the vineyards. The grand crus and premier crus are hand-harvested and the Chablis and Petit Chablis are machine-harvested. All wines are fermented using ambient yeasts and aged on their lees in stainless steel vats, with the Petit Chablis and Chablis aging for 8 months and the premier crus and grand crus aging between 12 and 16 months. The wines undergo light fining with bentonite and a light filtration before bottling.
Patrick Piuze
Brief Description of Style & Vinification Techniques: All grapes used are harvested by hand, from Petit Chablis to the Grands Crus. Piuze used a vertical press, similar to Roulot, in order to introduce oxygen early in the process. Piuze uses ambient yeast for fermentation, which lasts between three to six months. Wines go through malolactic fermentation and are aged in stainless steel and older oak barrels. There is no bâtonnage. His village wines are labeled by village as in “Terroir de Courgis” and fermented/aged mostly in tank. Wines are bottled with a light clay filtration.

Describe Soil types for the following Burgundy regions- Chablis Cote de Nuits Cote de Beaune Hautes Cote de Nuits Hautes Cote De Beaune Cote Chalonnais Maconnais Beaujolais
Chablis- Kimmeridgian soil and Portlandian for Petit Chablis. Kimmeridgian is an older soil; the Portlandian limestone is deposited on top of it. Portlandian soil, in Chablis, is in the 120-130 million year old range. Portlandian has a higher calcium content than Kimmeridgian soils. Kimmeridgian soils in Chablis are clay-limestone, whereas Portlandian are basically weathered limestone, albeit sans the exogyra virgula fossils that are found throughout the Kimmeridgian layer.
Cote de Nuits-
Cote de Beaune-
Redzinas and brown limestone soils
Hautes Cote de Nuits-
Hautes Cote De Beaune-
Hard limestones and clays. Pebbly limestone on flank. Limestone pavement and gravel at foot.
Cote Chalonnais- Hard limestone and softer marls. Pebbly alluvium over limestone n lower slopes.
Maconnais-Rendzinas and brown limestone; flinty, clayey, sandy. Mixed with sandstone pebbles. Reddish marls covered with limestone scree.
Beaujolais-
Haut is granite and schist on upper slopes. Stone and clay on lower.
Bas is Clay and Sandstone.
